Greek potato salad with garlic and almonds

posted in: Appetizers, Mom's, What's Cooking | 0

This is a traditional Greek dish, that is customary served with fried cod, dipped in batter, on March the 25th , to celebrate Annunciation. It is delicious, its best served cold and you can keep it in the fridge for days, the taste will get even better. I ll tell you how mom makes it but my advice is to take it easy on the garlic, because my mom’s portion is for very experienced users.

Ingredients

  • ½ kg potatoes
  • ½ cup of peeled raw almonds
  • ½ cup of olive oil
  • The juice of half a lemon
  • 2 cloves of garlic
  • 1 teaspoon of salt

Method

Wash potatoes very good, put them in a pot filled with water without peeling or cutting them, bring them to boil and let them cook for 45-50 minutes. In the meantime peel and mash the garlic and cut the almonds into small pieces.

Peal and mash potatoes while hot. Add oil, lemon juice, garlic and salt and blend. Finally ad almond and stir well so that it will be evenly mixed with the other ingredients. Your salad is ready.

Bon appetit!
