Gnocchi is Italian pasta with a very distinct taste, usually made from potato and flour. You can find them at the stores refrigerated, frozen, or dried but you can also make Homemade gnocchi all by your self.
Luckily for me that i am addicted to gnocchi and for you, who obviously feel the same way if you ‘re reading this post, Homemade gnocchi can be made very easily.

Ingredients
For Gnocchi
(4 Serves)
- 1 Kg Potatoes
- 1 Egg, beaten lightly
- 250-300 gr Flour
- 1 Teaspoon Salt
- Grated nutmeg
For Tomato Sauce
- 1 glass of tomato juice
- 4 tablespoons olive oil
- 1 garlic clove
- ½ Teaspoon salt
- Oregano
Instructions
Put the potatoes in a pot filled with water bring them to boil, and cook them for 40 minutes. Peel the potatoes and mash them while hot. Let them cool.
Add salt, nutmeg and the slightly beaten egg. Mix the ingredients and ad the flour gradually until you have a compact soft dough. Don’t knead too much.
Dust your working surface with flour and divide the dough in 6-8 pieces. Roll each piece into a log about 3cm thick. Cut the logs into aprx. 2cm pieces.
Roll a piece of dough into a small ball and press it against a fork. Slightly fold to detach from fork and place on baked paper or floured surface. Repeat with each piece of dough.
In a small pot ad the oil, the garlic clove and the tomato juice. Bring them to boil, remove the garlic, ad salt and let it cook for 15 minutes. A few minutes before turning the heat off ad some oregano.
Cook gnocchi in a pot of salted, boiling water, in batches (do not overfill the pot). When they start to float remove them with a slotted spoon.
Dress them with olive oil and tomato sauce and garnish with fresh basil and cheese!
