This is an excellent recipe if you want to “force” feed spinach to your little ones, or not that little, that lack memories of “Popeye the sailor man” and therefore will not fall for the “spinach will make you stronger” speech, or they don’t lack them which means they‘re too old to believe in fairytales. They will all love it!
Ingredients for 6 servings (or 4 if you eat like we do)
- ½ kg spinach
- 200gr grated feta cheese
- 200gr smoked turkey ham finely chopped
- 2 cups grated Gouda Cheese
- 1 glass of milk
- 2 eggs
- 10 slices of bread
- ½ cup butter
- Salt
- Black pepper
Instructions:
Wash and drain and chop the spinach. Put a few drops of olive oil in a saucepan and sauté the spinach, until it’s juices have evaporated but do not let it burn. Add feta cheese, the turkey ham season with pepper and salt and remove the pan from the heat.
Brush the inside of a deep casserole dish about 35Χ25cm big, with some of the melted butter. Tile the bottom of the casserole with the bread slices, making sure that you don’t leave any gaps.
Brush the bed of bread with what is left of the melted butter. Spread the spinach, feta cheese and smoked turkey mixture, on the bread bed and finally sprinkle with Gouda cheese.
Put the eggs and milk into a bowl and beat them. Preheat the oven to 220C degrees. Add the egg and milk mixture into the suffle and set aside to absorb the liquids until the oven is ready.
Bake the sufle for 30 minutes, until is puffed up and cooked through.
Tips:
- Better use stale bread with dense pith. Toast bread can do the trick too.
- This dish must be served immediately and keep in mind that will fizzle out as soon as you cut it into servings. So if you want to impress your guests, better cut it in their presence of bake it in small individual casseroles.
